About this recipe

Boil them gently — a hard boil splits the dough and you lose the juice, which is the entire point. Sugar and cold smetana at the table, never in the pot.

  • 800 g Frozen vareniki with sour cherry

    Sour Cherry Vareniki - 400g

  • to taste Salt

    a pinch, for the water

    Pure Salt - 1Kg

  • 2 tbsp Sugar

    Granulated Sugar

  • 30 g Butter

    82% Unsalted Butter

  • 200 g Smetana

    Village Sour Cream

  • 100 g Sour cherry preserveOptional

    to spoon over

Instructions

  1. Step 1

    Fill a large pot with water and bring it to a gentle simmer over medium heat.

  2. Step 2

    Add a pinch of salt to the water once it begins to shimmer.

  3. Step 3

    Drop the frozen vareniki into the water one by one to prevent sticking.

  4. Step 4

    Keep the water at a very gentle simmer; a rolling boil will split the dough and leak the cherry juice.

  5. Step 5

    Remove the vareniki with a slotted spoon as soon as they float to the surface.

  6. Step 6

    Place the hot vareniki in a bowl and gently toss with the butter so they do not stick together.

  7. Step 7

    Top each serving with a generous dollop of cold smetana and a spoonful of sour cherry preserve.

  8. Step 8

    Sprinkle with sugar at the table to taste before serving immediately.
