Salo is the quintessential Eastern European delicacy, consisting of high-quality cured pork back fat. This classic plate pairs the melt-in-the-mouth texture of chilled salt-cured fat with the sharp, bold bite of fresh garlic and toasted rye bread. It is an essential component of any traditional zakuski spread.
Instructions
Step 1
Place the cured salo in the freezer for 15 minutes to firm it up, making it easier to slice thinly.

Using a very sharp knife, slice the chilled salo into translucent pieces approximately 3 millimeters thick.

Step 3
Cut each slice of the rye bread into halves or quarters to create bite-sized triangles.

Step 4
Thinly slice the peeled garlic cloves into small, circular rounds.

Step 5
Arrange the bread pieces on a large wooden serving board or a flat plate.

Step 6
Layer the thinly sliced salo pieces neatly over the bread or place them in a fanned-out circle in the center of the plate.

Step 7
Top each piece of salo with one slice of garlic and a tiny pinch of coarse sea salt.

Step 8
Garnish the entire platter with freshly chopped dill before serving immediately while chilled.
